So, who doesn't like peanut butter??
I've heard of or met who didn't like it were also deathly allergic. This I could understand as a reason for the treason..
But to be honest, those I've met who just didn't like it... it took me a few seconds to grasp that.
Peanut butter is literally a staple food item in my house. Like a day that there is not peanut butter is strange. And there's probably an understood reason why, and a date on the calendar for when to go to the store and get peanuts to grind into a happy frenzy:)
Anyways, if you are a pb fanatic, then you're probably aware of the million+ ways there are to enjoy the joy:)
Here is one more to add to your collection:
PB Crumb Cake
(makes 6" cake... goes great with a hot cup of coffee/espresso)
Ingredients:
Topping-
1/4 cup + 1 tablespoon oats
2 tablespoons oat flour
1 tablespoon stevia cup-for-cup
1 tablespoon peanut butter
1 tablespoon water
1/2 tablespoon agave
10 good dashes cinnamon
Cake-
1/2 cup oat flour
1/4 cup whole wheat pastry flour
1/4 cup stevia cup-for-cup
2 teaspoons cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
Good pinch salt
1/4 cup water
3 tablespoons applesauce
2 tablespoons peanut butter
1 tablespoon vanilla extract
1/2 tablespoon white wine vinegar
Directions:
1) Make
crumb- mix together all ingredients until combined. Set aside
2) Make
cake batter- mix together dry, set aside. Mix together wet with a spoon or
fork, stirring/whisking quickly until as combined as possible. Stir into dry
until all ingredients come together. Set aside at least 5 minutes
3) Preheat
oven to 350 and lightly grease a 6x6 glass baking dish however you prefer
4) Spread
batter into pan; top with crumbs
5) Bake
25 minutes, or until a toothpick inserted into the center comes out clean
