After at least a dozen on-the-right-track, not-right, somethin's-funny, almost-there, and please-don't-do-that-again recipes, I HAVE FOUND THE CHOCOLATE CHIP COOKIE MY SOUL LOVES<3
This recipe is a miracle.
It produces a cookies that is crispy on the outside, yet chewy and moist on the inside.
Just the right amount of chocolate-to-cookie ratio, and sweetness to the slight saltiness that every perfect cookie must contain...
It's crazy...because, guess what.... They're also healthy.
That's right, folks.
The best tasting cookie in the world is also a nutritional snack.
And it's also vegan, gluten free, and sugar free....

Perfect Chocolate Chip Cookies
(unless you eat like half of the dough beforehand...
not that i would know anything about that... ;] )
2/3 cup oat flour (homemade works great!)
1/3 cup stevia cup-for-cup
1 teaspoon baking powder
1/2 teaspoon baking soda
Good pinch salt
2 tablespoons natural unsweetened applesauce
2 tablespoons amber agave nectar
1 1/2 tablespoons water
1 tablespoon flax oil
1/2 tablespoon white vinegar
2 tablespoons chocolate chips
1) Preheat oven to 350 degrees and grease two tinfoil lined baking sheets
2) Mix dry ingredients together and set aside
3) Mix wet ingredients together well
4) Stir wet into dry ingredients and let batter rest for 7 minutes
5) Spoon batter onto prepared sheet and bake for 13 minutes
