Pineapple Sorbet

Ciao everyone!

So, I was debating for a while on what to say in the first line of this post.

I've decided on the following:

Welcome to my happy place:)

This pineapple sorbet (also pictured with a cocoa berry shake and chocolate fudge) may very well be one of the most delicious and amazing recipes of all time..

Besides the fact that the taste is out of this world and has the magical ability to impart sparkley fairy dusts of happiness, it is also ridiculously easy..... all while being very nutritious!!!!

Let's take a look at the ingredients another picture:)

Ok, now maybe the ingredients;)

Pineapples:
-super high in Vitamin C and manganese
-also excellent source of vitamin B6, vitamin B1, copper, folate, and fiber
-also excellent source of DELICIOUS

Bananas:
-great source of vitamin B6, vitamin C, manganese, potassium, and fiber
-also excellent source of :)

Oh look, here is the wonderful sorbet with almonds ------>





 And again...with coconut and chocolate chunks!!







 So, I think I've exhausted internet foodie blog exitement over this one.. it's about time for the actual recipe;)

Pineapple Sorbet
serves-1
Ingredients:
Banana (about 3")
Frozen Pineapple, in chunks (about 3/4 cup)


Directions:
1) Blend
2) Enjoy:)

Berry Sorbet

Ciaoooo everyone!

BERRY SORBET

EASY EASY EASY recipe...

But so stinkin good!

Takes care of cravings for sweet frozen treats in a superbly fruity way:)

Enjoy!


Berry Sorbet
serves-1
Ingredients:
3/4 cup frozen berries (of any sort)
1/2 small or medium banana
Optional: drizzle of honey, agave, or stevia

Directions:
1) Blend all ingredients in a good blender. (Single serve blenders work perrrrfectly, but a normal size ones can probably do the job just as well)
2) Taste and adjust sweetness to your preference!

Chocolate Chip Ice Cream Sandwiches (Or Whoopie Pies!!)

Ciao everyone!!

I think you should know by now a few things about me, from recurring themes in posts...

1) Christ the Lord is awesome and marvelous. He is God and He is the Savior of the world. And I believe that with my whole heart!

2) I love chocolate. AALLOOTT.

3) I love happy accidents!

And here is another recipe post about a veerryyyy happy accident:)

On my way to trying to configure a soy-based chocolate chip cookie recipe (which needs to be vegan and gluten free, in my opinion), I accidentally created the perfect cookie to be part in a sandwiching situation involving vegan whipped cream (which is also a recipe on this blog)!!

Very delicous, rather simple, and fun!

This recipe can be enjoyed as whoopie pies if not frozen, or very yummy ice cream sandwiches if frozen for 30 minutes before eating.... so try it both ways and see what your fancy is!!

Chocolate Chip Ice Cream Sandwiches! (or whoopie pies)
makes: 10 sandwiches

Ingredients for cookies:
7 oz extra firm tofu (1/2 typical store package after drainage)
3 tablespoons amber agave nectar
3 tablespoons water
1 tablespoon pure vanilla extract
¼ cup oat flour
¼ cup stevia cup for cup
1 teaspoon baking powder
2 tablespoons mini chips

Directions:
  1)     Combine flour, stevia, baking powder, and salt in a medium bowl
  2)     Puree wet ingredients with tofu; mix into dry ingredients
  3)    Let batter sit 5 minutes while oven heats to 350 and you grease two tin foil lined baking sheets
  4)     Mix in chips. Spoon batter onto sheets
  5)     Bake for 25 minutes; let cool for at least 10 minutes to firm up
                       
 
Ingredients for filling: 
Vegan Cool Whip/Whipped Cream

Assembly: Take two cookies and apply one good layer of refrigerated whipped cream between them!

Frozen yogurt

Ciao Everyone!!

Welcome to Florida

Where the sun is bright

Mickey mouse loves you

NASCAR threatens to blow your eardrums

And winter days are between 65-85 degrees, give or take depending on how bipolar the weather is feeling that day:P

However, there is one really great thing about it

Every day is still a good day for FROZEN YOGURT:)

Which makes me a happy girl

And just like with most things I tend to love, as far as baking....

That means I had to find a way to make some on my own;)

But here's the problem...

I don't own an ice cream maker

Nor will I succumb to drowning a once healthy snack option (yogurt) in nasty white sugars and other such things (unless we're talking chocolate chips or sprinkles... in which case, that is acceptable as the perfect accesory... just follow me for a minute;] )

Soooo... in case you haven't already figured it out... I'm about to give you the simplest, most delicious frozen yogurt recipe you've had. And it's homemade! Which makes it special:)

One of the most beautiful things about this recipe is that you can alter the amounts/flavorings to be whatever you want! (See my notes below.) It's like a magic crystal ball or something;)

Actually no...it's better than magic... It's 

Homemade Frozen Yogurt
(original recipe)
(makes...however much you want!)
Ingredients: 
Plain, non fat Greek yogurt
Agave nectar/Stevia, to taste
Pinch salt
A few drops of extracts of choice
Add-ins of choice 
About 1-2 tablespoons vanilla almond milk to every 1/2 cup yogurt

Directions:
1) Combine all ingredients except almond milk
2) Freeze at least 1 hour for every 1 cup yogurt used
3) Blend in a blender or food processor with almond milk
4) Enjoy!

General Notes:
-If you prefer a soft-serve type situation, use plain yogurt instead of Greek, and add less milk
-If you accidentally add too much milk in the blending process, stick it back in the freezer for about 10 minutes. You should have perfect consistency once again:)

*Cinnamon Vanilla (pictured above recipe)-
Greek yogurt, agave nectar+stevia, vanilla extract, cinnamon
*Silky Chocolate(pictured to the right)-
Greek + plain yogurt, agave+stevia, vanilla extract, almond extract, cocoa powder

Flavor Ideas:
*Maple Cinnamon-
Cinnamon Vanilla Fro Yo + maple extract
*Chunky Munky-
Greek yogurt, agave+stevia, vanilla extract, peanut butter, bits of banana (either in the freezing process, or mixed in after blended), chocolate chips (definitely mixed in at end)
*Strawberry Dream-
Greek yogurt, agave+stevia, vanilla extract, strawberry extract, diced strawberries mixed in at end
 *Orange Creamsicle-
Greek yogurt, agave+stevia, vanilla extract, almond extract, orange juice or extract
*Reeses Monster-
Greek yogurt, stevia+agave, vanilla extract, cocoa powder, peanut butter, reeses pieces mixed in at end
