Chocolate Chip Fluffer Cookies

Ciao Everyone!

Do you ever have a day when you just feel strange? As if you were caught somewhere between perpetual deja vu and loss of memory all together? And suddenly the memories you do remember feel like some kind of taunting dream?

Oops, accidentally proved my abnormality...again :P Ha..

Anyways, there is really only one thing to say about that I suppose...

THANK YOU LORD for dark chocolate and chocolate chip cookies! Both full of fantastical powers that can cure...well... just about everything.

However, there is always the remaining question when one goes into the deep abyss and realizes the cure for today tends towards the cookie side of things.... What kind of cookie is today requiring? The crunchy chippers? Or the soft-and-gooey-melt-in-your-mouthers? Or perhaps a little creation would be in order of a nice warm batch of....




Fluffy Chocolate Chip Cookies
(An original recipe)
Makes: 20-25 medium sized cookies
or 25-30 mini cookies:) 
Ingredients:
1 1/4 cup + 1 tablespoon oat flour
1/4 cup Truvia baking blend (or another sweetener)
1/4 cup natural unsweetened applesauce
2 teaspoons Smart Balance light (or something like butter..or butter:] )
1/4 cup plain non-fat yogurt
1/2 teaspoon baking soda
1 tablespoon pure vanilla extract
1/8 cup semi sweet chocolate chips

Directions:
 1.) Put all ingredients into a food processor (except the chocolate chips!) and blend until well combined.
 2.) Set oven to 380 degrees to begin heating. 
 3.) Add chocolate chips to batter and mix. Allow cookie dough to rest for at least 15 minutes. (However, if you can wait until more like 20 minutes, that would be better. The longer the batter sits, the fluffier the cookies will become:] )
 4.) Spray a baking sheet with non-stick spray. Spoon cookie dough onto sheet. (Just know that they will rise and fluff from where you put the dough, but they don't spread out really, so it would not be bad to put them a little closer together than your average cookies:] )
 5.) Bake for 10-12 minutes. 
 6.) Try not to burn your tongue too badly;) 

P.S. Sorry about my not-very-fantastic pictures.... A photographer is one thing I shall never become.. Even though my sister takes amazing pictures, and my mom practically is one of the very best photographers in existence. *Sigh*

Well, I suppose I shall stick to music and baking <3<3<3

P.S. I have decided these are really more like Chocolate Chip Muffin Tops, which are very delicious for what they are...but I have created a BETTER cookies recipe! So go find it, because they are delicious;)
