This recipe was created as the product of a late night snack attack between myself and a very sweet friend of mine, who happens to be vegan. She is a very awesome Music Production major at college and that also is pretty cool, in my opinion:) Haha.
Alsooo, they are very good with diced fruit of whatever variety happens to be in season. We used pears. It was fantastic.
Very Yummy Pancakes
1 cup whole wheat flour
1/2 cup wheat germ
1 teaspoon baking soda
1 teaspoon baking powder
1 1/4 cup vanilla almond milk
1 teaspoon apple cider vinegar
Optional: diced fruit of any variety, dallop of peanut butter, vegan chocolate chips, cinnamon, dried fruits of various kinds
Serve with: maple syrup, honey, or agave nectar
1) Combine dry ingredients (from flour to salt). Begin to allow pan to heat up on stove.
2) Add wet ingredients and any optional or creative ingredient you like and stir until combined.
3) Spray pan with non-stick spray. Cook pancakes until underside is crispy; flip; cook until underside is crispy.
