Mac'n'cheese, plleeease and thank you!
I don't know about you, but ever since I was little, mac'n'cheese has been on my top 5 favorite foods list...
And when I was little, it was always the blue box of golden wonder, or it wasn't the right mac for me.
That quickly goes from a sweet memory to a bitter realization when you hit a certain age and gain a certain amount of knowledge and realize the amount of crap in that poor, innocent blue box, being hidden under the mask of a royal gold wonderfulness...
If only there was a way to have the love of the golden goodness, but still be healthy in your choice and beneficial to your body and mind simultaneously, while basking in great memories....
There's no way, right?

Very, very, wonderfully wrong!!!
Please make this recipe, for the good of all of the imaginary friends that sat with us through so many bowls of blue box mac in yester-years....
Vegan Mac'n'Cheese
serves:1
Ingredients:
1/2 cup beans (preferably a variety of white beans, such as great northern, cannelini, or pinto)
1/4 cup water1 slice vegan American or cheddar cheese
Tumeric
Black pepper
Garlic powder
Onion powder
Optional: hot sauce/chili flakes (pictured to the right)
Also optional: wheat germ (pictured above)
To serve: your preferred variety of noodle. I LOOVVEEE this on zucchini noodles!!!
Directions:
1) Puree beans with water until very smooth.
2) Pour contents into a bowl and add cheese and spices.
3) Microwave on 500-600w power (on my microwave, that is the medium power button) for 30 seconds.
4) Stir cheese in and repeat; then pour over noodle of choice.
5) ENJOY<3
