Corn and Black Bean Salsa Bowl

Ciao everyone!

Another quick recipe!

Ha, I do hope you are enjoying these as much as I am loving making them...

Super easy, super nutritious, and super helpful for the busy college student! (Or mom, or any other busy person:] )

Here is a cool info blurb on the nutrition in corn (which has sadly gotten so much negative light because of the GMO stuff going on about it.. Yes, be aware of the situations, but don't let it stop you from buying and using the good stuff!!!!)

-Full of awesome antioxidents in the form of phytonutrients!!
-Full of fiber
-Excellent source of vitamins C, B3, B5, and manganese


Corn and Black Bean Salsa Bowl
serves as many as you prepare it for!
Ingredients:
Black Beans
Sweet Corn
A bit of your favorite pre-made salsa
Chopped, diced, or grape tomatoes
Hot sauce
Cayenne Pepper
Chili flakes
Optional: Lettuce to use as Lettuce Wraps!!! :)

Directions:
Mix together. Eat as a snack or meal; enjoy by itself, with chips, or in lettuce wraps! (Obviously, I am partial to the lettuce wraps idea...)

Lazy Mexi Bowl

Ciao everyone!!

Do you love Mexican flavors?

I'm tellin you what.. they know where it's at when it comes to certain things.

There are certain times when a craving arises that only a Mexican flavored dish can satisfy.

But what happens when we come across those times and we are tooooo busy to put all the thought and energy into making that delicious dream a tasty reality??

Well, we can sit there doing nothing and think about the problem.

Or we can contemplate the fact that there is no problem while enjoying a...

Lazy Mexi-Bowl!
serves-however many you wish it to serve:)
Ingredients:
Black Beans
Chopped Carrots
Diced Avocado
Rotel (mild or spicy...however you like it!)
Black Olives
Red Chili Flakes
Hot Sauce
Black Pepper

Directions:
Throw all ingredients in desired quantity into a bowl and toss around well. That's it! Enjoy your Mexican yumminess:)

Mexican Stuffed Peppers

Ciao Everyone!!!!


Wow, today was busy.

Lots of driving...

Did you know that sometimes dancing in the car is the best way to stay awake when driving on long and tiring roads????

Yeah, well, all I have to say about that on a personal note is... Thank God for the Latino radio station. Fan-Tastic;)

Sooo needless to say by the time I got home, I was in a more Latin/Mexican mood than normal.

Well I'm Italian from NY... and honestly I'm generally never in that mood... Anyways, relatively speaking, I was feeling very Mexican...

Which went from a joyous feeling to a completely happy occasion wheeeeeennnn...

I made MEXICAN STUFFED PEPPERS:)

You should too.

While listening to Latin dance music.

It's a pretty great combination!


Mexican Stuffed Peppers
(original recipe)
Ingredients:
1 bell pepper (any color of choice)
1 small carrot, diced
1/4 cup non fat plain Greek yogurt
1/2 cup black beans, rinsed and drained
1/4 cup rotel (or diced tomatoes + green chilies or onions)
black pepper
onion powder
garlic powder
onion flakes
cumin
paprika
cheddar cheese (thinly sliced or shredded)
optional: black olives, sliced

Directions:
1) Cut pepper in half; core; seed; rinse.
2) Place on tin foil lined baking sheet and cook in convection oven at 400 degrees on broil, 10 minutes.
3) While cooking prepare stuffing: Mix together all ingredients from carrot to spices. 
4) Stuff peppers; cook 15 minutes.
5) Top with cheese and olives; cook another 2-5 minutes. 
6) Enjoy!
