Peanut Butter Balls

Ciao everyone:)

First of all, let me just tell you what I realized this evening.

Went to take a shower, and looked more analytically at the hair care bottles my sister uses..

It was a shampoo and conditioner set. Of course, the shampoo went with the matching conditioner variety. The adjective beneath "conditioner" happened to be "moisturizing".

Sure, I'd hope so. All is well.

Now, the adjective beneath "shampoo" was.....   "shampooing"??

Really now. You have one job. Describe the shampoo. And you choose..... "shampooing"????

Well, I suppose at least it didn't try to tell me it conditions. I'd be a little fearful at that point. :P

ANYWAYS. Onto more important things. Like....

Peanut Butter Balls
makes-25-30
Ingredients:
1 (15 oz) can chickpeas, rinsed and drained
1/4 cup creamy (preferably homemade) peanut butter
1/4 cup agave nectar or honey
Pinch of salt (if you are using not very salty peanut butter0

Directions:
1) Combine all ingredients in a food processor or really good blender and blend until thoroughly and beautifully combined
2) Set oven to 350 degrees to begin heating and line a large baking sheet with tin foil; lightly coat with olive/coconut oil, or your favorite non stick spray
3) Roll batter into balls and place on baking sheet; bake for 25 minutes
 
Now, you should know, these taste NOTHING like beans in anyway shape or form. They just taste addictingly delicious. Made them for a coworker, and then for a party, and both times they were very much enjoyed:)

p.s...this makes the most delicious peanut buttery batter in the history of peanut butter batters... it's ridiculous. Fair warning;)

Chai Cookies

Ciao everyone!!

Are you a fan of chai tea??

For the most part, I've only known people to be completely for it or against it...

Personally, I love it:)

And it was the inspiration for these cookie's flavors!

Like literally... I took the box of chai tea and placed it next to my mixing bowl when thinking of how much of which flavor to add;)

Feel free to try different levels of spice!

Chai Cookies
Makes-25
Ingredients:


1 (15 oz) can chickpeas, rinsed and drained
1/4 cup applesauce
2  tablespoons flax (milled, ground, or flax meal)
2 tablespoons agave
1 tablespoon vanilla
3/4 teaspoon cinnamon
2/4 teaspoon cloves
2/4 teaspoon ginger
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon black pepper
Extra cinnamon for sprinkling on top

Directions:
1) Add all ingredients to a food processor/good blender; blend until smooth
2) Preheat oven to 350 degrees. Lightly grease a tin foil lined baking sheet. 
3) Drop 25 cookie batter balls onto the sheet and bake for 25-30 minutes (until the bottom is just beginning to brown

Granola Cookies

Ciao everyone!!


Here is another cookie recipe that was a fail in terms of original goal, but complete success in deliciousness!

Granola Cookies are seriously an awesomely fun treat.

Whether you choose to have them with yogurt as a way cooler (and less messy!) way to have granola, or as cookies just because you can have them and not feel bad about it, they are great:)

Granola Cookies

Makes-10-20
Ingredients:
1 cup oats
1/3 cup oat flour
3 tablespoons raisins
2 tablespoons stevia cup-for-cup
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Good pinch salt
1/3 cup water
2 tablespoons applesauce
1 tablespoon agave
1 teaspoon vanilla
1/2 teaspoon white vinegar
Overfull 1/4 teaspoon cinnamon

  1)     Mix dry ingredients together
  2)     Mix wet ingredients together in a separate bowl
  3)     Combine the two in a separate bowl
  4)     Let batter rest for 10 minutes; in the meantime, preheat to 350 degrees and spray a tin foil lined baking sheet with olive oil or your favorite non-stick spray
  5)     Bake for 13-15 minutes, when cookies are not stuck to tin foil at all and have a nice browning situation happening underneath.

Thai Peanut Butter Drop Cookies

Ciao everyone!!!

I know what you're thinking...

You looked at that title, and you're like..

"Peanut Butter Drop Cookies... YUM:).. Ohhh hold on to my horses.. does that say Thai?? WWhhhaaatt?!"

Yes, Thai.

As in, a delicious grouping of flavors blended into a cute little delicious treat, with a similar feel to a crisp and chewy peanut butter cookie.

Here is the other crazy thing, which I will just prepare you on before you get to the recipe..

We are going to use popcorn to make the flour for these cookies!!!!

Yay for delicious new things to try!!!!!!!!!

The popcorn flour makes these little joys airy and fun:)

Thai Peanut Butter Droplets
makes-10
Ingredients:
2 cups fresh air popped popcorn (which makes 1 cup flour)
2 tablespoons stevia cup-for-cup
3/4 teaspoon ground ginger
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Good pinch salt
2 tablespoons homemade peanut butter
2 tablespoons lime juice
2 tablespoons water

Directions:
  1)     Preheat oven to 350 degrees; lightly grease a tin foil lined baking sheet
  2)     Grind popcorn in a blender or food processor until you have a fine powder
  3)     Combine in a bowl with other dry ingredients
  4)     Combine wet ingredients separately
  5)     Stir wet ingredients into dry
  6)     Drop onto prepared baking sheet. Bake for 20 minutes

  P.S. Because of the popcorn instead of flour, these are gluten free! Also vegan. Also low calorie! (Only about 19 calories per cookie!) Also, they are adorable:]
